Schil de ui en smeer deze in met wat olijfolie en verpak deze in aluminiumfolie. Leg in de voorverwarmde oven (200\u02da graden) en pof ze ongeveer\u00a0\u00bd uur. Als de ui en de bieten klaar zijn laat ze dan afkoelen tot ze lauw zijn. Schil de bieten en doe deze samen met de ui, de noten, de olie \u00a0en de knoflook in de blender. Pureer alles tot een gladde massa en breng op smaak met peper, zout en citroensap.<\/p>\n<p>&nbsp;<\/p>\n<p>Voor de sandwich:<\/p>\n<p>Verwarm de oven voor op 200 graden. Schil de pompoen en snijd in plakjes. Doe wat olijfolie in een ovenschaal. Meng vervolgens in een kom de overige olijfollie met knoflook (geperst), tijm (alleen de blaadjes) en giet over de pompoen. Rooster de pompoen in ong. 15 minuten gaar. Controleer regel matig, de pompoen mag niet te zacht worden.<\/p>\n<p>Smeer royaal 2 plakken brood in met de bieten-tofuspread. Leg hierop de gebakken pompoen. Garneer met rucola-sla en walnoten. Leg de andere 2 plakken brood er bovenop.
