Ingredients2 x 2 SoFine Broccoli Burgers
1 red onion
1 head lettuce
200 ml soya yoghurt
1 tsp sugar
1.5 tbsp white wine vinegar
Freshly chopped herbs (e.g. mint, chives, dill)
Freshly milled pepper
2 hard (spelt) rolls with sesame seeds
Oil for frying
Big Broccoli burger with yoghurt-herb dressing
Mix the soya yoghurt, vinegar and sugar in a bowl. Stir the freshly chopped herbs into the mixture. Save some of the herbs as a garnish. Season the dressing with salt and freshly milled pepper to taste. Set to one side.
Prepare the Broccoli Burger according to the instructions on the pack. Cut the (spelt) rolls in half. Heat the oil in a frying pan and briefly fry the cut side of the rolls. Thinly slice the red onion.
Layer a burger, some salad leaves, a couple of onion rings and some dressing onto one half of the roll, then repeat to create a double decker burger! Garnish with some of the reserved herbs and get ready to enjoy your Big Broccoli Burger!
Use the rest of the lettuce, red onion and yoghurt dressing to make a salad.
Tip: For an extra bite, scatter some chopped walnuts onto the burger.
