Broccoli burger with rocket salad
Heat 2 tbsp olive oil in a frying pan. Fry 450 g potato segments for 8-10 mins. until golden brown and tender. Heat 1 tbsp olive oil in a frying pan. Fry 2 broccoli burgers for 6 mins., turning regularly. In the meantime make a salad using 1 red onion sliced into half rings, 3 sliced tomatoes and 50 g rocket. Dress the salad with 3 tbsp extra virgin olive oil, 1 tbsp crema di balsamico and season with salt and pepper. Divide the potato segments and broccoli burgers over 2 plates. Serve with the rocket salad.
Tip: Use grilled sweet pepper strips or sliced courgette instead of tomatoes.
