Pour 150 g couscous into a bowl. Pour over 250 ml hot water and leave the couscous to swell for 5 mins. Remove the seeds and slice 3 tomatoes into cubes. Slice ½ cucumber into cubes. Finely chop 1 red onion. Finely chop 1 bunch parsley. Stir the grains of couscous with a fork to separate. Stir the toma to, cucumber, onion and parsley through the couscous. Add the juice of 1 lime. Divide 1 drained tub of SoFine SoCheeze cubes sun-dried tomato (250 g) over the couscous. Dress with 2-3 tbsp of the oil from the cubes. Season the salad to taste with pepper.
tip: Also tastes great with a BBQ or as a picnic dish. Serves 4.
