Crusty ciabatta with tartar sauce and SoFish burger
Slice 1 cucumber, 1 small red onion and 6 radishes. Mix the vegetables with 2tbsp oilive oil, 1 tsp lemon juice and 1 tsp dill. Heat 1 tbsp oilive oil in a frying pan and fry 2 SoFish burgers for 6 mins. turning regularly. In the meantime make the sauce by mixing 2 tbsp (vegan) mayonnaise, 1 tbsp finely chopped gherkin, 1 tsp dill, 1tsp lemon juice and 1 tsp capers. Slice 2 ciabatta rolls in half and spread some sauce on each half. Arrange some little gem lettuce leaves, ½ red onion and the burgers on the rolls. Serve the burger on a plate with the cucumber salad. Enjoy!
Tip: For an extra taste of the sea, garnish the burger with some samphire!
