Thinly slice 2 tomatoes. Slice 1 onion into rings. Divide 50 g mixed salad leaves over 2 plates. Arrange the tomatoes and onions on the salad. Divide 1 drained tub of SoFine SoCheeze cubes mediterranean herbs (250 g) over the salad. Dress with 2-3 tbsp of the oil from the cubes. Garnish with 2 tsp capers and season to taste with pepper
tip: You can also add grilled sweet pepper, courgette or aubergine to make a more filling salad.
