Pearl couscous with green asparagus burger
Cook 90 g pearl couscous according to the instructions on the packet. Heat 2 tbsp olive oil in a frying pan. Add 200 g cherry tomatoes and 1 sliced orange sweet pepper and fry for about 5 mins. In the meantime heat 1 tbsp oilive oil in a frying pan and fry 2 green asparagus burgers for about 8 mins. turning regularly. Add 1 small red onion in rings, 2 finely chopped garlic cloves to the vegetables and the juice of half a lemon and fry for a further 3 mins.
Stir the vegetables through the couscous and serve with the green asparagus burgers.
Tip: Add some baby salad leaves and serve the couscous cold.
