Pre-heat the oven to 220°C Finely chop 1 clove of garlic. Heat 1 tbsp olive oil in a frying pan. Fry the garlic for 1 min. Add 300 g spinach. Stir the spinach until the leaves have wilted and the moisture has evaporated. Place 2 ready-made pizza bases with tomato sauce on a baking tray. Divide the spinach over the pizza bases. Divide 250 g cherry tomatoes and 1 drained tub of SoFine SoCheeze cubes sun-dried tomato (250 g) over the pizzas. Bake the pizzas in a pre-heated oven for 8-10 mins. until they are golden brown. Remove from the oven. Generously sprinkle the pizzas with the oil from the cubes.
Variation tip: Use mushrooms or grilled green asparagus instead of spinach.
