Sandwich with almond-tofu spread and sprouts
Blend the tofu, almonds, basil, garlic and olive oil until you have a smooth paste. Season with salt, pepper and the lemon juice.
Grate the carrots and thinly slice the beetroot, cucumber and tomato.
Generously coat the bread with the tofu spread. Layer the salad leaves and vegetables on top and garnish with the sprouts.
Tip: Also tastes great with avocado and walnuts.
