SoFish burger with pea puree and tagliatelle
Boil 200 g peas for 3 mins. Puree the peas with 1 pressed garlic clove and some mint leaves. Gradually add the olive oil until you have a smooth puree. Season with salt and pepper. Place in the fridge.
Cook the pasta according to the instructions on the packet with a dash of olive oil and a pinch of salt. Drain the pasta and mix with a little oil to prevent it sticking. In the meantime finely chop the shallot. Fry the shallot with 1 pressed garlic clove. Prepare the SoFish burger according to the instructions on the pack. Add the remaining peas to the shallot and garlic and briefly fry. Add the cooked tagliatelle and 1-2 generous tablespoons ( to taste) of the pea and mint puree. Spoon onto a plate. Serve with the SoFish burger and garnish with mint leaves.
Tip: Serve with a crispy green salad.
