Verhit een eetlepel olie in een koekenpan en rooster de tomaatjes zo\u2019n 2-3 minuten. Snijd de bosui fijn en spoel schoon in een vergiet. Laat de tofu uitlekken.<\/p>\n<p>&nbsp;<\/p>\n<p>Fruit de knoflook voor een paar minuten op zacht vuur tot deze begint te geuren en verkruimel de tofu in de pan. Voeg de kurkuma, en de sojasaus toe. Roer alles goed door elkaar en duw met een spatel de tofu in stukjes. Bak alles zo\u2019n 5 minuten op middelhoog vuur. Breng evt. op smaak met nog wat peper &amp; zout. Voeg als laatste de bosui en tomaat toe.<\/p>\n<p>&nbsp;<\/p>\n<p>Snijd 1-2 sneden brood per persoon in mooie stevige plakken. Rooster het brood in een grillpan of tosti-apparaat. Snijd de avocado in mooie reepjes. Verdeel de scrambled tofu over het brood, verdeel de avocado erover en garneer met verse basilicum.<\/p>\n<p>&nbsp;<\/p>\n<p>Tip: roerbak extra groenten zoals spinazie of verse boerenkool als laatste mee door de scrambled tofu.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Was de tomaten en snijd in stukjes (of laat de cherrytomaatjes heel aan een tak).
